First off, let's start with ingredients;
COOKIES:
1/2 cup light butter
1/2 cup granulated swerve
1/2 cup brown sugar swerve
1/2 cup Bowmar Nutrition buckeye butter
1 egg
1 tsp vanilla
1 cup all purpose flour
1/2 cup Bowmar Nutrition protein frosted cookie
1 tsp baking soda
1/1/2 tsp salt
FILLING:
1/2 cup Bowmar Nutrition buckeye butter
1/2 cup light butter
1 cup powdered swerve
For the cookies, mix butter, brown sugar, and granular sugar together. Add in buckeye butter, egg and vanilla and stir until combined. In a separate bowl combine dry ingredients and slowly mix into the wet mixture. Once combined, chill the dough for about 1 hour. Once chilled, roll dough into balls about 1’. Roll the ball into a log shape and press cross cross pattern into the two ends of the log with a fork covered in swerve granular. Pinch the center to create the peanut shape.
Bake for 7-8 minutes or until edges are golden brown. I like mine still soft and underdone in the middle but just use your judgement! I made larger ones that cooked for 10-12 minutes so just keep an eye on them to prevent over baking.
While they’re baking, combine buckeye butter and light butter. Once mixed slowly add in powdered sugar. Once the cookies are cooked, spoon filling on the cookies and create a sandwich.
