WHAT YOU WILL NEED:
half a loaf of sourdough
3 tbsp basil pesto (see pesto recipe HERE)
1 tbsp red wine vinegar
1/4 cup extra virgin olive oil
around 4 cups mixed cherry tomatoes
1/2lb fresh mozzarella balls
kosher salt and black pepper
basil and parmesan for garnish
This recipe makes around 4-6 servings depending how much you can eat!
Simply half your mozzarella balls and tomatoes. Combine all remaining ingredients except your parmesan and basil. Mix your pesto with your tomato mozzarella salad, making sure everything is properly coated. Spread your mixture on some fresh sourdough that has been halved and toasted then add some grated parmesan and fresh basil to top.
