Lower Calorie Potato salad

First off, let's start with ingredients;

INGREDIENTS:
1/2 lb baby reds
1 hard boiled egg
1/4 cup fried & chopped bacon( 2.5 slices)
1/2 tbsp bacon grease
2 tbsp light mayo
2 tbsp light sour cream
1/4 tsp dried dill
1 tbsp chopped red onion
1/2 tsp stone ground mustard
1/8 tsp horseradish
2 dill pickles - chopped up
Parsley

Boil your baby reds until soft enough for a fork to sink in easily. Drain and rinse with cold water. Dice into smaller chunks and set aside. Cook your bacon and pat dry before chopping it up.

For your sauce, combine sour cream, mayo, bacon grease, dill, mustard, and horseradish. Combine your potatoes, chopped bacon, sauce, onions, and chopped pickles. Let set in the fridge for a few hours and top with parsley.


If you can’t tell, I couldn’t decide between what type of potato salad I wanted to make so I just put everything I like in one recipe. If you don’t like pickles in yours, don’t add it in. If you don’t like dill in yours, add yellow mustard or something else to flavor. Play around with it. Do you.


520 calories total, 40C/31F/20P obviously this is more that one serving, unless you just wanna eat a half pound of potatoes. If so, I applaud you.
