INGREDIENTS:
1 box of couscous (~1 cup)
1 cup sliced fresh baby portabellas
1 cup cut asparagus
1 cup cherry tomatoes
chopped garlic
2 tbsp parmesan
1 tsp lemon juice
parsley to garnish
INSTRUCTIONS:
Prepare the box of couscous according to instructions. In a separate pan sauté your veggies. Before combining, add in your garlic, lemon juice, and parmesan for a minute or two and then toss together. Garnish with fresh parsley and serve as a side or as a meatless main dish!
