Protein Lemon Poppy Seed Muffins

First off, let's start with ingredients;

INGREDIENTS:
2/3 cup granular swerve
1 egg
1/4 cup + 2 tbsp unsweetened applesauce
1/3 cup unsweetened almond milk
1 tsp vanilla
1 tbsp poppy seeds
1/2 cup + 2 tbsp all purpose flour
1 scoop + 2 tbsp bowmar Nutrition protein lemon bar
1 tsp baking powder
1/2 cup plain fat free greek yogurt

Preheat oven to 350 degrees. Mix swerve, egg, applesauce, and almond milk until combined. Fold in poppy seeds and set aside. In a separate bowl mix flour, protein, and baking powder. Mix into wet ingredients, then fold in the Greek yogurt. Dish into greased cupcake liners and bake for 22-26 minutes or until a toothpick comes out clean. Do not overbake.

I always heat up my muffins in the microwave and smear them with light butter. It’s the bomb. Now I want more muffins.
