COOKIE INGREDIENTS:
1/2 cup light butter
1/2 cup granular swerve
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp cinnamon
1/4 tsp salt
1/4 tsp nutmeg
1/2 tsp vanilla
1 tbsp fat free plain greek yogurt
1/4 cup canned pumpkin
1 cup all purpose flour
2 scoops bowmar nutrition protein pumpkin spice
FROSTING:
2 tbsp light butter
2 tbsp brown sugar swerve
1 tbsp unsweetened almond milk
1/4 tsp vanilla
3/4 cup powdered swerve
1/2 scoop bowmar nutrition protein pumpkin spice
INSTRUCTIONS:
Preheat your oven to 350. Use a mixer to cream together the butter and granulated swerve. If you do not have swerve, just use regular brown sugar, granulated sugar, and powdered sugar. Add in your baking soda, baking powder, cinnamon, salt, and nutmeg. Once combined, add in your greek yogurt, vanilla, and pumpkin. Once combined, slowly add in your flour and protein. Use a cookie scoop to place a tablespoon sized ball of dough onto an ungreased baking sheet. I got about 8 on each tray, amounting to 16 total cookies. Bake in the oven for 10-12 minutes and let cool while you prepare your frosting.
For the frosting, simply combine your ingredients and frost once your cookies are cooled! I sprinkled just a pinch or two of cinnamon on top of the frosted cookies before digging in.
