Rigatoni with Vodka Sauce

INGREDIENTS:
2 servings of uncooked rigatoni pasta(168g)
2 tbsp olive oil
1/4 tsp minced garlic
1/2 tbsp vodka
2 tbsp tomato paste
1/4 cup heavy cream
1/2 tbsp light butter
1/2 tsp red pepper flakes
2 tbsp reserved pasta water
2 tbsp grated parmesan
salt and pepper to taste
basil for garnish

INSTRUCTIONS:
Cook pasta in salted water. Heat olive oil in a saucepan. Add your minced garlic and cook until soft. Add your tomato paste and cook until slightly caramelized. Add your vodka and cook until evaporated. Add in your heavy cream, red pepper flakes, and your cooked drained pasta. Once mixed, add in your reserved pasta water, light butter, and salt and pepper. Then just stir in your parmesan cheese and enjoy!
