Banana Coffee Crumb Cake

First off, let's start with ingredients;

INGREDIENTS:
5 tbsp mashed banana
1/4 cup swerve granular
2 tbsp light butter
1/2 egg
1/4 tsp vanilla
1/2 tbsp light sour cream
3 tbsp all purpose flour
3 tbsp Bowmar Nutrition protein wedding cake
1/2 tsp baking powder
dash of salt

CRUMB TOPPING:
2 tbsp light butter
1/4 cup brown sugar swerve
2 tbsp Bowmar Nutrition protein wedding cake
2 tbsp all purpose flour
1/4 tsp cinnamon

Preheat oven to 350 degrees. Spray a medium loaf pan with non-stick spray. Combine softened butter and sugar until combined. Add mashed banana, 1/2 egg, vanilla, and light sour cream. Add flour, protein, baking powder and salt and mix until incorporated. Do not over mix. Pour into greased medium loaf pan.

In a small bowl, combine all crumb ingredients in a bowl, pressing the butter into the other ingredients until it turns to crumbs. Do not over press or it will turn into a paste. The more you press, the more your crumbs will sink. Then less you press, chances are they’ll stay on top. Sprinkle crumbs on top and hope for the best like I did. Bake in the oven for 35 minutes or until toothpick came out clean or with just a few crumbs! Let cool before cutting.
