Copycat Taco Bell Chicken Quesadilla

First off, let's start with ingredients;

2 low carb tortillas
1 bag of tyson premium white chunk chicken (7 oz)
(Precooked - found in the same aisle as tuna)
2/3 cup reduced fat fiesta blend cheese (Walmart)
2 tbsp light sour cream
1/2 tbsp low fat mayo (hellman's)
chopped jalapeno
garlic powder
cumin
paprika
cayenne pepper
salt & Pepper



Warm chicken in a pan (chicken in a bag is precooked so you don’t need to worry if it’s done or not). Once heated, add sour cream and mayo and stir. Add chopped jalapeno and the spices until you've reached the spice level you like.

In a separate pan, warm a tortilla and place half of the chicken mixture on the tortilla on top of 1/3 cup of the cheese. Close tortilla and flip until your cheese is melted. Repeat with the rest of the ingredients for a second quesadilla.
