Creamy Chicken Wild Rice Soup

If you’re looking for a comforting and hearty soup that’s perfect for a cold winter day, a creamy chicken wild rice soup is the way to go. To make a creamy chicken wild rice soup, you’ll need the following ingredients:

INGREDIENTS:
2 tbsp butter
10oz bag of frozen diced carrots, onions, and celery
1/4 cup all purpose flour
4 cups chicken broth
1/2 cup wild rice blend
1.5 cups shredded/diced chicken
1 cup heavy whipping cream
salt and pepper, to taste
1-2 tbsp fresh chopped parsley

I decided to make this soup in one pot and use frozen vegetables because let’s be real, I’m lazy and I want things to be minimal effort when it comes to meal time.

To start, take a large pot or dutch oven and begin by melting your butter. Once melted, you’re going to add in your frozen vegetable mixture. Feel free to use fresh celery, carrots, and onions if you please. Once heated through and tender, add in your flour and continue to heat until the flour smell has cooked off, then you add your chicken broth.

After rinsing your rice, go ahead and add the rice into your broth mixture. At this point, it is going to look like a whole lot of broth, and very little rice and vegetables. DON’T WORRY. We’re going to be cooking this down long enough to reach whatever thickness you desire. Cover and let the rice cook, stirring occasionally. Take a look at your wild rice instructions for approximate cook times. My wild rice approximated 45-50 minutes but I let it cook for over an hour before I felt it was done to my liking. At this point, you’re going to add in your chicken – I used leftover rotisserie chicken that I had picked apart and shredded and it worked perfectly, but you can obviously cook up some chicken and dice it, or buy precooked chicken as well if you’re short on time. Add in your heavy whipping cream and salt and pepper to taste and continue to simmer. At this point your soup may still be quite thin. I let it mine simmer on low, stirring occasionally, until the soup was to my desired level of thickness. I like my soup THICCCCCCK, so i left it on low for another 30-45 minutes while I caught up the dishes and a few other household chores. Once to your liking, garnish with some fresh chopped parsley and enjoy!

What if you let it cook too long and now it’s too thick!? Just add in some more broth. What if you like it creamier?! Just add more heavy cream. Luckily this soup is pretty hard to mess up and if i’m being honest, it got better and better each time I reheated it.
