Hawaiian BBQ Chicken Meatballs

First off, let's start with ingredients;
MEATBALL INGREDIENTS:
1 lb ground chicken
2 tsp minced garlic
3/4 tsp salt
1/2 tsp pepper
1 egg
1/2 cup italian breadcrumbs
1/4 tsp paprika
1/2 tsp onion powder

SAUCE INGREDIENTS:
1 1/2 no sugar added ketchup
2 tbsp low sodium soy sauce
1/4 cup pineapple juice
1/2 tsp minced garlic
1/4 tsp crushed red pepper flakes
2 1/2 tbsp swerve brown sugar


Combine meatball ingredients, but do not over mix; it will result in drier meatballs. Preheat oven to 475 degrees. Roll into balls that are equal to about 3 tbsp of meat mixture. This made around 15 meatballs for me. Place balls on parchment paper on baking sheet. Bake for 13 minutes.

Add sauce ingredients to saucepan and heat over medium heat. Once boiling reduce to a simmer for 8-10 minutes. Brush on meatballs and serve over whatever other side you’d like! I garnished with fresh chives and served with sticky white rice.
