My Go To Breakfast Sandwich

When it comes to breakfast, I’m not picky. I do however want something that is quick to make, and satisfies my never-ending salty/sweet cravings. This sandwich is perfect; toasted ciabatta, fresh mozzarella bubbling hot with applewood smoked bacon, a yolky egg, and a cranberry/strawberry horseradish jam to bring it all together. Savory and sweet, with a little kick of heat from the horseradish, this recipe is a hit every single time.

The great thing about this sandwich is that it’s customizable. You can change the type of cheese and meat to keep your family guessing! I’m biased but bacon has my heart and adds the crunch to this sandwich that makes my knees weak, but feel free to try out ham, canadian bacon, or sausage!

INGREDIENTS:
ciabatta rolls
eggs
bacon
fresh mozzarella (or preferred type of cheese)
strawberry jam
silver springs cranberry horseradish sauce

For this “recipe” I’m not going to write how how much of each ingredient you need. I believe in your ability to guesstimate based on how many guests you are serving. For one sandwich, I typically use a roll, one egg, two slices of bacon, about 1/4 cup of fresh mozzarella or cheese of choice. For the sauce I use equal parts of strawberry jam and cran-horseradish sauce; 1 tbsp each! If you don’t like a lot of heat or aren’t a fan of horseradish, simply compensate with more jam and less horseradish sauce!



INSTRUCTIONS:
I started off by spraying my ciabatta with some coconut oil non-stick spray. I add my mozzarella onto one half of the sandwich and place it in the oven at 400 degrees. Sometimes I cheat and simply use the toaster then use a torch to melt the mozzarella, but hey, do whatever works for you! Anyways, while that cheese is getting all melty and delicious, you’re going to fry your bacon and eggs. Cook them to your liking, and once done add them on top of your melted mozzarella. Then just mix up your sweet/spicy jam and spread it on the other side.
